What I Ate

I just sent my 3rd child back to college this morning. He told me that one of the things he will miss the most is the green smoothies I've been making him everyday.

He lives in the dorms and eats in the cafeteria. Upon realizing that the only fresh greens available was iceberg lettuce, he requested that they serve fresh spinach and now they do! He said he has a large plate of spinach with each meal and his friends think he is weird.

I know I've said this many times, but oh, how I wish I had found this way of eating when my kids were babies. I know it would have made a big difference in their health and in my attitude.

What I Ate Yesterday (someone needs to hide the pecans):
Breakfast:
  • small handful of raw pecans
  • big green smoothie
  • banana
  • orange
Lunch:
  • huge dark green salad (and black beans, mushrooms, sliced baked potato, apples, dried cranberries, and balsamic vinegar)
  • soft pita bread
Snack:
  • medium handful of raw pecans
  • medium glass of green smoothie
Dinner:
  • Amy's Lentil Soup 
  • avocado
  • orange
  • Sweet and Spicy Tea
  • MORE pecans
I'm hiding the pecans now.

Yes, those pesky nuts can be very addictive! I try to keep raw cashews on hand to blend in the soups but I have to "hide them from myself" so that I don't eat them first! I also second your sentiment that I wish I had eaten this way when my kids were growing up! They are both now very addicted to SAD food and turn up their nose at my green smoothies!

I've been following your blog for a few months now, and I had to say a couple of things:

1. You guys look amazing! Congratulations!
2. You are lucky you have each other. My husband isn't quite on board yet with the eating vegan (although he loves my green smoothies!) and it's amazing how much easier it would be if we were both shooting for the same goal (in regards to eating).
3. What you said about wishing you had started sooner? When your kids were younger? I TOTALLY get that. And my oldest is only 9! But her 7 year old sister would be so much better off if she had eaten this way her whole life. But thanks to green smoothies, she's seriously eaten more veggies in the last 2 months than she has in 10 of her lifetimes. I just hope the younger kids will benefit from an earlier start. :)

My mother visited my sister(Kelly O.) a couple of months ago and she was telling me all about you. My mother forwarded me your blog info and I have to say it's so inspiring! I have attempted and failed many times to do what you are doing. My Husband totally supports me in whatever I cook and would follow along, it's just my little munchkins that is the hard part. Ages, 4,3 and 1. Any ideas to transition them to eating like us? Thanks a ton!

Andrea - yes, sliced clod potatoes. They are delicious and creamy tasting. A nice contrast to the lettuce.
